I heard that a paste made from the spice CREAM OF TARTER and WHITE VINEGAR cleans stains on aluminum pans. I tried it on my paellera. It works great!! I thought I would pass the tip on to you and hopefully simplify you life a bit.

I am very familiar with Vega Sicilia, is probably one of the best wines in the world without doubt. It is expensive but worth it. There are other wines like Protos, Campo Viejo, Vina Mayor, Pesquera, Alion, 5 Valbuena; This last two are from the same manufacturer of Vega Sicilia with a fraction of price, try to buy years ' 94,' 95,' 96 on all of them and to be a Reserva or even better Gran Reserva. I think that the years ' 99, ' 001 are also good but we will have to wait and see.

There are many other brands, the trick is to select the Reserva and Gran reserva, the Rioja wines are typically drier, and the Ribera del Duero more fruit and aromatic.

Just a note to let you know my pan arrived a few days ago safe and sound. I can hardly wait to use it. You must understand that living in Thermopolis Wyoming is certainly a challenge for finding fresh sea food and saffron, not to mention some of the other ingredients. Anyway, we are use to traveling 2 hours to get groceries at the big cities.
